Baked Cheese Grits

This recipe is adapted from Bob’s Red Mill Natural Foods. It uses soy grits, which are similar to corn grits, but made from toasted soybeans that have been ground into coarse pieces.

1-3/4 cups chicken stock
3/4 cup Bob’s Red Mill soy grits
1/2 teaspoon kosher salt
3 ounces processed American cheese (such as Velveeta), cubed
3 eggs, well beaten
1/4 teaspoon ground black pepper
1/4 teaspoon Worcestershire sauce
1/2 cup grated carrot
1/2 cup minced celery
1/4 cup minced onion

Preheat oven to 350 degrees. Grease a 1-1/2 quart casserole dish.

Bring broth to a boil in a saucepan. Stir in grits, cover and reduce heat. Simmer 5 minutes or until done, stirring occasionally.

Combine grits with remaining ingredients and pour into prepared dish and bake for 30 minutes or until lightly browned.

Italian Pasta & Peas

Ingredients

  • 1 12-oz package of frozen peas
  • 1 can stewed tomatoes
  • 3 cloves of garlic, minced
  • 1 small onion, diced
  • 1 cup parmesan or romano cheese
  • 1 Tbsp olive oil
  • 1 package ditilani pasta
  • 1/2 – 1 cup water

Method

  • Boil water for pasta and cook pasta
  • In another pan: Heat olive oil and cook onion and garlic in until both are soft
  • Add can of stewed tomatoes – stir for 2 minutes
  • Add 1/2 cup water (add more water if needed)
  • Add peas (frozen or canned; if you use canned be sure to drain them)
  • (you can substitute peas for any kind of beans – this is very good with pork & beans)
  • Cook until peas are cooked – mix well. Add drained cooked pasta to peas – mix well. Add cheese.
  • You can make this as a soup by adding more water and garlic and using less pasta.

Pineapple Strawberry Smoothie

–        ¾ cup of pineapple juice

–        ¾ cup of skim milk

–        1 cup fresh strawberries

–        4 oz vanilla yogurt

–        ½ cup ice cubes

–        2 tbsp sugar

Combine all the ingredients in a blender and blend on medium, increasing gradually to high speed, for about 30 seconds or until the mixture is smooth and creamy.
